Fish Tacos

Fish tacos are a great lighter alternative to traditional beef or pork.  Catfish is a healthy fish choice; if choosing other fish, check the Monterey Bay Aquarium’s Seafood Watch Guides to see what the sustainable choices are in your area.

Ingredients

  • 2 pounds catfish, cut into strips
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup white corn meal
  • ¼ cup canola oil
  • 8 6-inch corn tortillas
  • ¼ cup fresh cilantro, chopped
  • 1 cup lettuce, shredded

Instructions

  1. Season the catfish strips with salt and pepper and coat with cornmeal. Pan fry in canola oil until done.
  2. Warm the tortillas. Place some of the cooked fish on each tortilla. Top with salsa, cilantro and lettuce. Fold tortillas in half and serve.
