At the Chef Ann Foundation, we strive to support schools in providing healthy and delicious scratch-cooked meals. By serving flavorful school meals made with whole ingredients, school food programs can nourish students so they’re fueled for the school day. Scratch cooking can positively impact children and school food professionals alike. However, we understand that it may feel challenging as many districts nationwide are short-staffed, facing ingredient shortages, and working with tight budgets.

Cheese Sauce

Replacing an artificial cheese sauce with a delicious, scratch-cooked option is a sure way to satisfy your students’ taste buds while making common favorite menu items healthier. It only takes five basic ingredients to whip up our velvety Cheese Sauce from scratch: flour, milk, butter, cheddar cheese, and salt. This creamy and versatile sauce can be served with freshly cooked elbow pasta for a homemade macaroni and cheese or served with local tortilla chips as part of a kid-favorite nacho dish!

To make this recipe, whisk the BBQ sauce and honey on high heat. Next, brush the drumsticks with the sauce mixture until evenly coated, and roast the drumsticks in the oven at 375 F. When they are done you will have tender and moist oven-baked chicken for your students to enjoy. Our Chicken Pesto Sandwich is a great introductory recipe since it can be easily prepared by your team with only five ingredients and is a great way to utilize commodity chicken. Additionally, school food teams can level up this recipe by preparing their own pesto using locally grown basil.

To make this delectable sandwich, simply combine pesto and mayonnaise and add sliced chicken to the mixture. Place the pesto chicken mix onto an open whole grain hoagie bun and add the jack cheese. And just like that, your sandwiches are ready to serve! This recipe is also a great grab-and-go option, making it appealing for secondary school students.
