Fish Tacos
Fish tacos are a great lighter alternative to traditional beef or pork. Catfish is a healthy fish choice; if choosing other fish, check the Monterey Bay Aquarium’s Seafood Watch Guides to see what the sustainable choices are in your area.
Ingredients
- 2 pounds catfish, cut into strips
- ½ teaspoon salt
- ¼ teaspoon pepper
- ¼ cup white corn meal
- ¼ cup canola oil
- 8 6-inch corn tortillas
- ¼ cup fresh cilantro, chopped
- 1 cup Tomato Salsa
- 1 cup lettuce, shredded
Instructions
Preparation
- Season the catfish strips with salt and pepper and coat with cornmeal. Pan fry in canola oil until done.
- Warm the tortillas. Place some of the cooked fish on each tortilla. Top with salsa, cilantro and lettuce. Fold tortillas in half and serve.
